Zuccini Casserole

Ingredients:

Have oven heating to 350 degrees.

Beat 4 eggs to blend in a large mixing bowl. Add vegetable oil, Bisquick, along with onion, cheese, chopped parsley, and salt and pepper to taste.

Toss in the zuccini, mix well, and pack into a greased casserole dish and bake at 350 degrees for 40 minutes.
